George Segal est le benjamin d'une fratrie de quatre enfants. Ses grands-parents paternels et maternels sont tous des immigrants juifs de Russie. Intéressé par le théâtre dès l'âge de 9 ans, il poursuit cette passion et entre finalement à l'université Columbia pour y décrocher un baccalauréat en Arts de la scène en 1955.
