Natalie was born Natalie Hershlag on June 9, 1981, in Jerusalem, Israel. She is the only child of Avner Hershlag, an Israeli-born doctor, and Shelley Stevens, an American-born artist (from Cincinnati, Ohio), who also acts as Natalie's agent. Her parents are both of Ashkenazi Jewish descent.

Hanno scelto l'attrice sedicenne Natalie Portman per interpretare il ruolo. Secondo le note di produzione del primo prequel, "Il ruolo richiedeva una giovane donna che potesse essere credibile come regina di quel pianeta, ma allo stesso tempo essere vulnerabile ed aperta". Le precedenti interpretazioni della Portman avevano impressionato Lucas.
