In order to prevent the formation of yeast film on the brine surface, a structural modified industrial barrel, which excludes oxygen from the headspace, was tested.

I blended at the end of fermentation whereas I usually blend during or at the beginnng. 2. I have used a wine yeast which is not as vigorous whereas I usually use a champagne yeast (the taste is much better for this).
