Dubliner here. On day 1, I would skip the Guinness tour and spend the time in an authentic Irish pub instead. Mulligans is great but if you visit The Oak, Brogans or the Lord Edward on Dame St instead or The Long Hall on Georges St, you would be much closer to Christchurch Cathedral b4 or after. Over 1000 yrs old.
